Rolona is Castellari Bergaglio's 100% Cortese Gavi DOCG from hillside vineyards in the comune of Gavi, grown on calcareous soil; it has been awarded a Gambero Rosso Berebene Quality-Price prize and a Mundus Vini silver medal.
Tasting notes
Balance and easy drinking define this wine. Very fresh aromas, with intense and lingering notes of white fruit (pear), green apple, hay, a pronounced minerality and citrus tones (citron). A substantial palate with good length, where the refreshing acidity confirms this Gavi's timeless character. Serve at 10°C in tulip glasses.

- Vinification
- Grapes transferred to the cellar immediately and gently pressed to extract only the best part of the juice. Fermentation, temperature-controlled at 18-20°C to preserve the Cortese di Gavi's typical aromatic richness, proceeds slowly over about 20 days. Bottled in February and March to allow a minimum of bottle ageing before release.
