Fornaci

Fornaci is a 100% Cortese Gavi DOCG from Castellari Bergaglio's own hillside vineyards in the comune of Tassarolo, named for a former brick kiln on the site and known for its clay-rich soil.
Tasting notes
A fine, delicate wine, never banal. Floral aromas (hawthorn and lily of the valley) and fruity notes (banana) with citrus, hay and mint. Well-balanced on the palate, with a finish rich in fruit again and a pleasant freshness. Serve at 10°C in tulip glasses.

- Vinification
- Grapes transferred to the cellar immediately and gently pressed to extract only the best part of the juice. Fermentation, temperature-controlled at 18-20°C to preserve the Cortese di Gavi's typical aromatic richness, proceeds slowly over about 20 days. Bottled in February and March to allow a minimum of bottle ageing before release.
