Castellari Bergaglio Pilin

Pilin is Castellari Bergaglio's most demanding wine, named by the winemaker after his grandfather; grapes are dried in crates for 30-40 days before fermenting and ageing in barriques, with production dating back to 1984.

Tasting notes

From the third year after harvest it enters its best drinking window, which lasts for many years. Cortese di Gavi is a versatile grape that can give both easy-drinking wines and complex wines that gain pleasure with time.

Vinification
After 30-40 days' drying in small wooden crates, the grapes are gently pressed to extract only the best part of the juice, then settled and fermented. The fermenting must is transferred to barriques, where it completes both alcoholic and malolactic fermentation and stays without further racking until the following September. A racking and light clarification precede cold stabilisation and bottling. The wine is released only after two years of bottle ageing.
