- Vinification
- Destemmed and crushed, then fermented on the skins in temperature-controlled steel tanks at 25 to 26°C for 10 to 12 days with frequent pumping over and punching down; malolactic fermentation in steel. Aged 12 months in French oak barrique plus 6 months in steel, then 6 months in bottle before release.
