- Vinification
- Destemmed and crushed, then fermented on the skins in temperature-controlled steel tanks at 26 to 28°C for 15 to 20 days with frequent pumping over and punching down; malolactic fermentation in steel. Aged 12 to 16 months in medium-toast French oak barrique plus 6 months in steel, then 12 months in bottle before release.
