- Vinification
- Destemmed and crushed, then fermented on the skins in temperature-controlled steel tanks at 24 to 26°C for 6 to 8 days with frequent pumping over and punching down; malolactic fermentation in steel. Aged 8 to 12 months in steel tank, then 6 months in bottle before release.
