- Vinification
- The old vines give a naturally low yield, cut further by a strict selection of grapes, down to about 30 hectolitres per hectare. Light destemming is followed by a 15-day alcoholic fermentation in steel vats with frequent pumping over, at 26 to 30°C, then a further 15 days of skin contact before the wine goes into barrels for malolactic fermentation. It spends about a year in wood and 8 months in concrete before being bottled unfiltered during a waning moon.
