- Grapes are destemmed immediately and the free-run juice is left in contact with the skins for one night (cryo-maceration) before pressing. Alcoholic fermentation takes place in stainless steel tanks at 14 to 16°C over almost a month; malolactic fermentation happens if the vintage calls for it. The wine is kept on its fermentation lees until bottling, with a weekly batonnage.
