A Charmat-method rosé sparkling wine from a blend of old and young estate vines, with raspberry and citrus aromas.

Tasting notes

Bright, delicate pink colour with a fine, elegant, minute and continuous perlage. The bouquet is intense and particularly refined, with notes of raspberry, citrus and wisteria. The dry taste is lively and quite unique.

Pairs well with

An excellent aperitif that can also be enjoyed throughout a meal: recommended with cured ham and medium-aged cold cuts, Parmigiano Reggiano and Bra Tenero cheese, seafood crudo and fassona beef tartare.

Vinification
Gentle, quick whole-cluster pressing to avoid oxidation; first fermentation conducted cold in steel tanks; second fermentation in bottle using the Martinotti (autoclave/Charmat) method. Lees ageing lasts at least 7 months to preserve the wine's original fragrance, with minimal dosage to avoid altering its natural balance. Aged over 7 months in autoclave. About 6,000 bottles produced annually.
