Planted 2004, 4,000 vines/ha at 1 m x 2.5 m, Guyot-trained trellis, K5BB and 420A rootstocks, yield about 7,000 kg/ha.
Vinification
Made to keep the freshness and elegance of Nebbiolo. Fermentation with maceration lasts 6 to 8 days, then the still cloudy wine is held at 18 to 20 C for malolactic fermentation. In December it moves to oak for about a year, followed by about as long in bottle. Wine aged in wood is neither filtered nor clarified (estate-level statement).
Storage
Ages well, but the producer suggests drinking it relatively young.
