Tasting notes

Violet colour, very lively; elegant, fruity nose of good complexity with a slight bitter-almond finish typical of the area's Dolcetto.

Vineyard planting
Planted 1991, 4,630 vines/ha at 0.8 m x 2.7 m, Guyot-trained trellis, 420A, K5BB and SO4 rootstocks, yield about 7,000 kg/ha.
Vinification
Grapes are destemmed and crushed, then ferment at no more than 26 C. After about 7 days the wine is drawn off the skins and held at 18 C for malolactic fermentation, then kept in steel and cement tanks until bottling in April, followed by a month in bottle before release.
Storage
Keeps well for some years, though it gradually loses its freshness.
