Planted 1994/2003, 3,700 vines/ha at 1 m x 2.7 m, Guyot-trained trellis, K5BB and 420A rootstocks, yield about 6,000-7,000 kg/ha.
Vinification
Hand-sorted grapes arrive whole in perforated plastic crates, are destemmed and crushed, and ferment in temperature-controlled tanks for about 7 to 8 days at no more than 26 C, pumped over frequently with the cap floating. Maceration then continues for 10 to 15 days with the cap submerged. After racking the still cloudy wine is held at 18 C for malolactic fermentation. It ages at least two years in Slavonian oak casks of 15 to 30 hl, then one year in bottle at about 15 C. Wine aged in wood is neither filtered nor clarified (estate-level statement).
