Novelle is a metodo classico Extra Brut sparkling wine made from a native black-skinned grape of the Roero area, aged a minimum of 36 months on the lees.

A fine, elegant sparkling wine with fragrant, floral notes. A wine with good freshness and fullness on the palate.

First fermentation at low temperature in stainless steel tanks for about 20 days, second fermentation in bottle for about 30 days, then a minimum of 36 months on the lees in bottle. Refined for 3 months at controlled temperature after disgorgement.
