Tasting notes
Intense straw yellow. Delicate bouquet of exotic fruit such as pineapple, with a caramel aftertaste. Soft on the palate with a pleasant freshness in the finish.
Pairs well with
Fish appetisers, light first courses, risotto, asparagus, oriental cuisine.

- Vinification
- Crushing and destemming, then about 7 hours of cryomaceration in the press with dry ice before soft pressing. 3 weeks of fermentation in temperature-controlled steel, 5 months on the lees with periodic batonnage, kept in steel until bottling under nitrogen. At least 30 days of bottle rest.
