- Vinification
- Each variety is harvested separately according to ripeness, then collected in crates and gently pressed. Fermented with selected yeasts at a controlled 28C for about 10 days, racked once colour and tannin balance is right, and aged in stainless steel for about 24 months before bottling, settled naturally without fining or filtering.
