Tasting notes
Light red with cherry reflections, dry and fresh with a pleasant tannic bite, and a delicate aroma with hints of ground pepper.
Pairs well with
White meats, cured meats, and fatty fish such as eel or salmon.

- From the company's oldest Grignolino vineyard, about 20 years old.
- Vinification
- Grapes hand picked in crates and gently pressed, fermented at a controlled temperature of 24C with selected yeasts. Racked early, before fermentation finishes, to limit polyphenol extraction from skins and seeds. Aged in stainless steel for about 4 months before bottling.

- 12-14C in summer, 16-18C in winter
