Tasting notes

Intense ruby with garnet reflections. Complex nose of overripe fruit and spice, with a sweet, minty note. Rich structure with easy drinkability, long finish, fleshy sour cherry.

Fermentation in steel with pumping over for 8-10 days and maceration of at least 14 days (site: 15-20 days in steel); 30 months in 25 hl oak barrels per site (tech sheet: 36 months, 18 in 20-25 hl oak); not filtered. About 13,700-15,000 bottles.
