Tasting notes
Deep ruby red with violet reflections and a garnet rim. Complex, harmonious, with spicy notes and ripe fruit. Warm, full, austere, structured, persistent, with pleasant, enveloping tannins.

Game and well-aged cheeses.

- Vinification
- Hand harvest of the best bunches in 20 kg perforated crates. The two varieties are vinified separately because they ripen at different times: soft destemming, fermentation on the skins in temperature-controlled stainless steel for 20 days at 28-30°C with frequent pump-overs and punch-downs; blended after malolactic fermentation. Sixteen to 24 months in medium-toast Allier barriques of first and second passage, bottled two years after harvest, six months in bottle. First vintage 2004. About 1,000 bottles (0.75 l, 1.5 l).
