A barrique-fermented Chardonnay, first made in 2011 and named as a tribute to Burgundy.
Tasting notes
Pale straw yellow with golden reflections. Complex, with mineral notes, ripe fruit and toasty hints in good harmony. Savoury, full, persistent, with good structure and freshness.
Pairs well with
White meats and structured fish such as salmon; also worth trying with oysters or fresh to medium-aged goat cheeses.

- Vinification
- Hand harvest in 20 kg perforated crates, soft pressing of whole bunches with a short cold settling of the must; fermentation in first and second-passage French oak barriques. No malolactic fermentation. Seven to ten months on the lees in barrique with weekly batonnage for the first four to six months, bottled the following spring-summer, six months in bottle. First vintage 2011. About 4,000 bottles (0.75 l, 1.5 l).
