Cascina Castlèt Uceline

Made from Uvalino, an almost-extinct local red variety the estate revived through its own vineyard research.

Tasting notes

Intense crimson red with fine garnet tones that vary with the vintage. Broad, intense bouquet of ripe fruit and sweet spices, very persistent. Dry, warm, well-balanced palate, pleasantly acidic with marked tannins that soften with age, and a long, intense aromatic finish. Alcohol 14.5 to 15.5% vol. The estate notes the variety is naturally rich in resveratrol.

Pairs well with

A wine for conversation; ideal with big meat and game dishes, and long-aged cheeses.

Harvest
End of October at full ripeness; hand-picked, selected bunches are laid in small perforated crates and moved to a well-ventilated, temperature-controlled drying room for over a month of light over-ripening.
Vineyard planting
Uvalino, an old, nearly forgotten local variety, reintroduced in the estate's own experimental vineyard.
Vinification
The must, from crushing and partial destemming, ferments slowly, over 20 days, at a moderate 22 to 25°C with frequent pump-overs for full anthocyanin and phenolic extraction; malolactic fermentation and ageing follow in prized 5-hectolitre oak tonneaux.
Serving temperature
18°C in large tulip glasses with a slightly flared rim.
Storage
Bottles rest at least a year before release and can age for many years in the right conditions.
