A passito made from dried Moscato bianco grapes, fermented and aged in new Allier barriques for over eight months.
Tasting notes
Intense straw yellow turning golden after long ageing in bottle. Powerful, fragrant bouquet of ripe fruit, dried apricot, aromatic herbs, banana, honey and yellow flowers. Warm, generous palate with a delicate sweetness balanced by fresh acidity, robust, harmonious and velvety, with long aromatic persistence. Alcohol 13 to 14% vol.
Pairs well with
Blue cheeses and aged goat cheese, foie gras, game pâté, desserts and small pastries; also a meditation wine.

- Harvest
- Mid-September, hand-picked and selected, then laid in small crates for appassimento in ventilated, temperature-controlled rooms; drying time varies with the year's weather.
- Vineyard planting
- About 5,000 vines per hectare, maximum yield 60 quintals of grapes per hectare; drying reduces the yield to 25 to 30 hl of wine per hectare.
- Vinification
- Soft pressing gives a rich, dense must that ferments in new Allier barriques for over eight months, with long contact on the lees and frequent bâtonnage.
- Serving temperature
- 12°C in small glasses.
- Storage
- Rests in bottle at least a year and is released two years after harvest; can age for many years at 13 to 15°C.
