Il Poggio di Gavi Sole sul Poggio

A rich Gavi from Rovereto aged in acacia wood, made to show that Gavi can age; the producer says it can develop for 10 years.

Tasting notes

Golden yellow with white flowers, vanilla, mint and marjoram, tropical pineapple and a mineral note of graphite and flint. Velvety and full-bodied with citrus acidity and white fruit, then taut, spicy and savoury, closing on ginger and white pepper.

Pairs well with

Robiola di Roccaverano, smoked cheeses, fresh savoury or medium-aged cheeses, Varzi salami, pork skewers, roast guinea fowl, rabbit with olives; also mushroom pasta and lightly spiced Asian-inspired dishes.

Soft pressing, temperature-controlled fermentation in stainless steel, malolactic fermentation completed, 12 months in acacia tonneaux, static clarification, bottled with minimal added sulphites, at least six months in bottle before sale. Alcohol 13%, residual sugar under 0.5 g/l, total acidity 5.7 g/l.
