A brut metodo classico from Cortese made for the aperitivo, nine months on the lees.
Tasting notes
Brilliant straw yellow with a fine, persistent bead. Fresh and nimble, with savoury notes of lychee and yellow citrus. Fragrant on the palate with pleasant acidity and fascinating minerality; the finish lingers on grapefruit, mandarin and sugar cane.
Pairs well with
Sweet green olives, Parmigiano, salty nibbles, olive all'ascolana, classic canapes, smoked salmon, vitello tonnato, fried vegetables and shellfish, chicken salad, pizza and fried chicken; the page adds big salads, delicate first courses, raw fish, asparagus, eggs and mozzarella.

Soft pressing, fermentation and static clarification in temperature-controlled stainless steel, second fermentation in bottle on the lees for 9 months, minimal added sulphites after disgorgement, at least 2 months of rest before sale. Alcohol 12.5%, residual sugar 6 g/l, total acidity 5.12 g/l.
