The Cortese that distils the most typical traits of the grape, from a south-west facing amphitheatre of hills north of Gavi; good young and able to rest a few years in the cellar.
Tasting notes
Yellow with cedar, pineapple, basil and thyme with balsamic touches. Creamy, citrusy and savoury, rich in tropical fruit and aromatic herbs, with a long mineral finish tinged with almond.
Pairs well with
Savoury tarts, baked fish, meat ravioli, stuffed eggs, vegetable omelettes, roast chicken.

- Soft pressing, fermentation in temperature-controlled stainless steel with indigenous yeasts and in part selected yeasts, two months in bottle before release. Alcohol 12.5%, residual sugar 1 g/l, total acidity 5.10 g/l.
