- Horizontal roto-fermenters, about 5 to 6 days on the skins, then about 10 to 15 days in stainless steel; malolactic in steel. Ageing: 12 to 14 months in used French oak barriques; bottled in July and released in September two years after harvest. Alcohol 13.5 to 14.5% vol, total acidity 5.10 to 5.80 g/l.
