Density 5,000 plants/ha, altitude 370m a.s.l., from selected old vines about 30 years old.
Vinification
After a soft pressing, a long maceration occurs; alcoholic fermentation starts spontaneously with indigenous yeasts without using sulfites. Aged at least 4 months in small oak barrels in contact with indigenous yeasts, then in bottle at a controlled temperature of 15°C.
