Tasting notes
Pale straw yellow. Pleasant, delicate varietal nose with notes of crisp apple. Mineral, dynamic palate with balanced structure, persistent salty finish and vertical acidity.
Pairs well with
Fish dishes, pasta with delicate fillings, white meats, medium-aged cheeses.

- Single amphitheatre vineyard of 1.6 ha, 1 ha of it organically farmed Arneis, worked by hand only, planted before 1984; picks and fermentations split by ripeness and sun exposure.

- Native-yeast fermentation from a pied de cuve made with grapes from the estate's own vines; separate picks; part classic white winemaking (free-run must only), possibly part skin maceration without cold-started alcoholic fermentation. 6 to 8 months in concrete, then 6 months in bottle.
