Pure Dolcetto from a vineyard of about 40 years in Cappellette, on south-facing marl and limestone soil.
Tasting notes
Colour: intense ruby red with purple hues. Nose: broad, intense and fresh, with blackberry, cherry and floral notes. Palate: full and structured, pleasantly tannic and persistent, with an almond finish.
Pairs well with
First courses, white meat, medium-aged cheeses, especially traditional Piedmontese agnolotti

- Controlled-temperature maceration for one week with intense, frequent pump-overs; malolactic fermentation follows immediately after racking. Ages about 10 months in temperature-controlled steel and a further 6 months in bottle.
