- Vinification
- After a selective manual harvest the grapes are kept in a refrigerator for about one week at 3 degrees Celsius. The destemmed grapes are fermented in temperature-controlled stainless steel tanks, with a brief period of batonage and relatively quick bottling to preserve freshness.
