Vinification
Traditional vinification lasting 30-40 days in concrete tanks without added yeasts. Must pumped over floating cap 2-3 times daily for first 15 days. Ancient practice of submerging cap with wooden staves during 15-20 day skin maceration.
Storage
Large wooden vats and casks of 25/50 hl for 18-24 months, then concrete for 6-12 months, then bottle for 6-12 months before release
