- Vinification
- Cooling of the grapes, destemming and crushing, 5 days of stabulation and gentle direct pressing with no skin maceration beyond pressing time, static settling, fermentation in stainless steel at 16 C, 3 months of batonnage, no malolactic fermentation. 5 months in stainless steel with manual batonnage. Best within 3 years of harvest. About 5,000 bottles.
