- Selection in the vineyard, cooling of the grapes, destemming and crushing, classic fermentation in stainless steel tanks with pumping over and delestage, submerged-cap post-fermentation maceration, average maceration 45 days, malolactic fermentation during alcoholic fermentation. 36 months in medium-toast French oak (50 hl casks and barriques). Ageing potential over 30 years. About 2,000 bottles.
