Vinification
Destemming and crushing, gentle pneumatic pressing, static settling of the must, inoculation and fermentation in stainless steel at 18 C, settling and clarification in stainless steel, no malolactic fermentation. 6 months in stainless steel. Best within 3 years of harvest. About 3,000 bottles.
