Single-variety Dolcetto from the family's old vineyards in Montelupo Albese, fermented and aged in steel. Alcohol 13 to 14% vol depending on vintage.
Tasting notes
Ruby red with violet tones and a characteristic aroma ending on a bitter almond note. Dolcetto typically gives fresh, fragrant aromas, and the Montelupo soils add structure; the producer says it can improve with a couple of years of ageing.
Pairs well with
A wine for the whole meal, especially poultry and fine poultry, roast white meats and raw meat salad

- Fermentation and maceration in steel tanks, on average 7 to 9 days, at a controlled 27 to 29 °C. Malolactic fermentation and a short ageing in steel follow, and maturation finishes in bottle.
