Cloudy, lightly sparkling 100% Cortese from Tassarolo, made by the ancestral method with no filtration. Organic, 13.5% alcohol, batches of 1,000 bottles.
Tasting notes
Light, persistent effervescence. Intense straw-yellow with faint green highlights. Complex bouquet of fruity notes alongside floral tones. Fresh, lively, pleasantly citrus flavour. Cloudy appearance, medium dry.
Pairs well with
Excellent as an aperitif; goes with finger food, sushi and light meals from international cuisine (the Italian page also names Japanese fried dishes such as tempura).

- Ancestral method: the grapes are lightly pressed to extract the native yeasts, then fermented in stainless steel at controlled, usually low temperature. Fermentation is slowed and then stopped, keeping enough sugar for it to resume in the bottle without added sugar or yeast, giving a lightly sparkling wine.
