Vinification
Before pressing, the destemmed grapes are cold macerated at 8 to 10 degrees C for a period that varies with ripeness (2 days in 2017, 1 day in 2018, 3 days in 2019); fermented in steel to bring out a more intense aroma, then refined in 4 to 5 year old barriques where it stays in contact with its lees until bottling.
Storage
After fermentation, in 4-5 year old barriques where the wine remains in contact with its sediment until bottled.
