- Vinification
- Hand-picked in about 20 kg crates, selecting the highest bunches on the cane first; this also helps the remaining bunches ripen fully for the red wine. The grapes rest overnight to cool down, then are destemmed and pressed the next morning. Only the free-run must goes into the rosé; the pressed portion is used for the table wine. Fermentation with selected yeasts takes place in stainless steel at a controlled 16 to 18°C. After natural cold settling and clarification over winter, the wine is bottled the following spring.
