Sparkling
Volo Libero
By Eugenio Pastoris, Canavese, Piemonte, Italy
Pas dosé sparkling wine from a vineyard at Viverone planted in 2017, worked without machinery. Disgorged in January 2024 with no dosage, unfiltered.
Tasting notes
The Volo Libero Pas Dosè Erbaluce sparkling wine displays a pale straw color with persistent bubbles, offering nuanced aromas of citrus zest, white peach, and a subtle yeasty complexity. The palate is bone dry and invigorating, with a bright acidity and a long, mineral-driven finish. [Profiles: fresh, dry, complex, mineral, crisp]
