Tasting notes
A nose full of white fruit, flowers and citrus. Mandarin and pink grapefruit on the palate, with a dry, fresh finish and a persistent perlage.

- Vinification
- Destemmed and gently pressed without pressing the berries, so only the free-run flower must is used. First fermentation in temperature-controlled steel tanks, then almost 9 months of ageing. Second fermentation in bottle, then at least 36 months on the lees. Riddled by hand.
