Tasting notes
Evolved aromas of dried fruit and shortbread balanced by sage and thyme. Honey, dates and lily of the valley on the palate, with toasted brioche and salty biscuit notes and a very fine, persistent perlage.

- Destemmed and gently pressed without pressing the berries, so only the free-run flower must is used. First fermentation in temperature-controlled steel tanks, then almost 9 months of ageing. Second fermentation in bottle, then almost 48 months on the lees. Riddled by hand.
