Fragrant and refined, with flowers and biscuit on the nose. Precise and savoury on the palate, with a very fine, persistent perlage.

- Destemmed and gently pressed without pressing the berries, so only the free-run flower must is used. First fermentation in temperature-controlled steel tanks, then almost 9 months of ageing. Second fermentation in bottle, then almost 36 months on the lees. Riddled by hand.
