- Barbera vines roughly 50 years old, Pinot Noir vines roughly 15 years old
- Vinification
- Grapes are de-stemmed and fermented separately in stainless steel tanks with punch-downs three times a day for 15 days. After alcoholic fermentation, the wine is pumped into another tank for malolactic fermentation. The wine is then transferred without pumps into barrels.
- Storage
- Aged for 18 months in barrels, followed by four months in bottle before release.
