- Vinification
- Grapes are de-stemmed and fermented separately in stainless steel tanks with traditional punch-downs three times a day for 15 days. After alcoholic fermentation, the wine is pumped into another tank for malolactic fermentation. The wines are then transferred without pumps into first- and second-use French oak barrels for aging. Blending may occur before barreling or before bottling.
- Storage
- Aged for 18 months in first- and second-use French oak barrels, followed by four months in bottle.
