- Vinification
- Grapes are de-stemmed, then fermented in stainless steel tanks with traditional punch-downs three times a day for the first nine days. Alcoholic and malolactic fermentations occur at ambient cellar temperature. The wine is then delicately transferred to another tank for aging until April.
