Cortese traditional-method sparkling wine, at least 36 months on the lees, very dry at under 6 g/l sugar.
Tasting notes
Brilliant straw yellow with a fine, persistent bead. Clean and intense, with bread crust, yeast, flowers and citrus. Dry, fresh and fragrant, with a slightly almond finish and a very long finish.
Pairs well with
Fish dishes, shellfish, seafood, white sauces, medium-aged cheeses and sweet desserts; also as an aperitif

- Vinification
- Soft pressing, cold settling and fermentation at 18-20°C for 15-20 days, with the second fermentation starting the winter after harvest. At least 36 months on the lees in bottle, stacked horizontally and restacked every 6 months, then disgorged with the estate's own liqueur and closed with a mushroom cork. Sugar under 6 g/l, 12.5% alcohol.
