Vineyard planting
20-year-old vines, vertical trellis training, Guyot pruning. Two plots, one label: a south-facing plot gives depth, a south-east-facing plot gives freshness and lightness. Farmed organically; the estate has been certified organic since 2014.
Vinification
60% from the south-facing plot: crushed, pressed and aged in concrete until the following spring; 40% from the south-east-facing plot: same vinification and ageing; indigenous yeasts; no fining, no filtration; released 8 months after harvest.
