The Riserva version of Sivà, first released with the 2018 vintage, aged 60 months on the lees versus the classic bottling's 36.
Tasting notes
Colour: clear, deep straw yellow with golden reflections, fine and persistent perlage. Bouquet: intense and complex, fruity of ripe apple, pineapple and citrus, herbaceous, bread crust, balsamic hints and resin. Taste: dry, fairly warm entry and soft in the mouth, with apple fruitiness and a warm pineapple sensation, a hint of almond, pronounced minerality, freshness and acidity.

- Vinification
- Direct, gentle pressing of the grapes with must fermentation at low temperature (16°C) using selected yeasts for both tank and bottle fermentation. Classic method: re-fermentation in the bottle at 15°C with 60 months resting on the lees, twice the minimum used for the classic Sivà bottling.
