Pietro Cassina Severina

A varietal Nebbiolo under the Coste della Sesia DOC, from the Cascina Chignalungo estate, matured first in steel and then about two years in large wooden barrels.

Tasting notes

Bright ruby red, rather intense, tending to orange with age. Very intense, fruity nose with hints of violet, rose and ripe red fruit, and balanced spice. Dry, harmonious, full-bodied palate, well-balanced tannins, reminiscent of cherry, berries and spice.

Pairs well with

Braised beef in Nebbiolo, roast beef or lamb, stewed venison or wild boar; mushroom risotto and tagliatelle; aged cheeses such as Grana Padano, Gorgonzola and mountain Toma Piemontese; tajarin with meat sauce, agnolotti del plin, chicken cacciatore, grilled vegetables.

Soil
Fluvioglacial gravelly-sandy soils, coarse and heterometric, deeply altered and partly loose, topped by loessic silty-clay layers. Acidic (pH 4.5-5.4), rich in manganese and iron, orange, yellow and dark brown in colour.

Vinification
Bunches are thinned around June and July, then hand-picked in 7-9 kg crates with a further selection in the cellar. After sorting on a vibrating table, destemming and soft crushing, the grapes drop into temperature-controlled steel tanks for spontaneous fermentation and 7-10 days of skin maceration below 28°C, with punching down and pumping over about twice a day. The wine is racked and matured in steel tanks for at least 12 months, plus a further passage of about 2 years in large wooden barrels, then bottled for final ageing.
