Pietro Cassina Septem

Described by the estate as its most prestigious wine, Septem is a Lessona DOC Nebbiolo aged about seven years in Swiss oak before bottling, from the Cascina Chignalungo vineyard.

Tasting notes

Intense ruby red turning toward orange with age. Very intense and persistent nose, rose and violet followed by cherries and red berries, then a delicate close of spice and minerality. Dry palate with well-developed tannins, intense, balanced and persistent; good structure, harmonious and velvety.

Pairs well with

Red meats and game such as knife-beaten Fassona, braised or roasted beef and venison; mushroom risotto and tagliatelle; aged cheeses like Parmigiano and Gorgonzola and mountain Toma Piemontese; tajarin with truffle or meat sauce, agnolotti del plin, chicken cacciatore.

Vinification
Grapes are hand-picked in 7-9 kg crates with a further selection in the cellar. After sorting on a vibrating table, destemming and soft crushing, they drop into temperature-controlled steel tanks for fermentation and 7-10 days of skin maceration at up to 28°C, with punching down and pumping over about twice a day. The wine is racked and aged in wood for about 7 years, then bottled for further ageing in bottle.
