Tasting notes
Intense straw yellow. Intriguing and complex on the nose, with mineral notes of flint, dried fruit and star anise. Sapid, intense and mineral on the palate, where a pleasant acidity contrasts density and softness. Long persistence.
Pairs well with
Fish dishes, pasta with delicate fillings, white meats, medium-aged cheeses.

- Fermentation at 16 to 19 °C in reduction, in stainless steel, on the lees for 3 to 4 months with frequent stirring. Longer ageing in steel tank and then in bottle, released about four years after harvest.
